5 Delicious Reasons Why You Should Grow Kale

One of the veggies that I really love to eat is kale. It is very versatile, high in Vitamin K, vitamin C, beta carotene, and calcium.

Some people may shy away from it because of the tough leaves, but there are ways of preparing it that will amaze your taste buds. I personally had never tried it until I had it in a smoothie. It gave me a boost of energy that was better than any drug. I highly recommend it and learning about things to do with kale will give you even more ways to benefit from its powers.

Have a smoothie

My special way of adding kale into my life was to incorporate it into a tasty drink. There are many kale recipes that you can try, but I like adding a few leaves with apple, strawberries, and a little bit of orange juice. Mix that all together with my vita mix and a delicious creamy smoothie is born.

Make some juice

Put your juicer to work and throw in some kale, apple, and a bit of lemon. Ginger will spice things up a bit too. Have fun and create your own special juice recipe. The kale has a bitter taste, so you need the apple or even a tomato to balance it out nicely and create a palpable taste.

Kale Chips

I have been meaning to try these because they sounds delicious. Wash and thoroughly dry the kale. Tear the long stems from the leaves only leaving the dark green pieces. Toss with olive oil and salt and lay the strips on a baking sheet. Bake in a preheated oven at 275 degrees for about 20 minutes and turn the leaves halfway through the cooking time.  If you desire, you can toss in other seasonings to create more flavors.

Stir Fry

How about kale for dinner? Like broccoli, you can stir fry it with seasonings such as garlic, chili powder and onions. Just add what you would normally put into your stir fry dish and substitute the veggie for kale. You will be amazed at what you can create.

Soup

Add some kale to your favorite soup, or throw it into a Vitamix with a tomato, salt and pepper. Blend it until it is warm and smooth and enjoy your delicious dish. A raw soup is wonderful and a vita mix is excellent for that.

Tips

Don’t be afraid of kale. It may look intimidating, but if you take the time to prepare it properly, it will be totally satisfying.  As a vegetarian, kale has become my go to veggie and it gives me the energy I need to get through the day.
